George Howell

George Howell’s career spans five decades, beginning in 1975 with the founding of The Coffee Connection in Cambridge, Massachusetts. As one of the earliest architects of the specialty coffee industry, Howell treated coffee with the same reverence as fine wine, focusing on origin, processing, and the inherent characteristics of the bean. His early success grew to 24 locations before the company was acquired by Starbucks in 1994, a deal that notably included the rights to the Frappuccino, which Howell had developed and trademarked.

Following the sale of his first company, Howell shifted his focus toward the upstream side of the supply chain, working with the United Nations and the International Coffee Organization to develop economic sustainability models for farmers. This work culminated in the 1999 co-founding of the Cup of Excellence, an international competition and auction program that revolutionized the industry by providing a platform for farmers to receive direct recognition and premium prices for high-quality lots, effectively breaking the traditional commodity-based pricing cycle.

In 2004, Howell returned to roasting with the launch of George Howell Coffee. This iteration of his work emphasizes 'terroir'—the idea that a coffee’s flavor is inextricably linked to its specific geographic and environmental origin. His company operates on a direct trade model, prioritizing long-term partnerships with producers and paying prices that significantly exceed Fair Trade standards to incentivize the meticulous craftsmanship required to produce exceptional coffee.

Technical innovation remains a hallmark of Howell’s approach. He was the first to implement the vacuum-packaging of green coffee and pioneered the practice of freezing raw green beans to halt the natural aging process. By preserving the moisture and chemical integrity of the beans, these methods allow roasters to maintain the peak freshness of seasonal harvests throughout the entire year, a practice that has since been adopted by high-end roasters globally.

Howell’s influence also extends to the analytical side of the industry. He was instrumental in the development of early coffee refractometry and software systems, such as Extract MoJo, which provided roasters and baristas with the tools to measure extraction precision. This commitment to data-driven quality control, combined with a light roasting style designed to highlight natural sweetness rather than roast character, has set a benchmark for modern specialty coffee.

Today, George Howell Coffee continues to operate as a standard-bearer for single-estate and regional excellence. The company’s current operations, including its cafes in the Boston area, serve as a living laboratory for his philosophy. By focusing on transparency, education, and the elevation of the farmer as a partner, Howell’s work remains a central pillar in the ongoing evolution of coffee as a high-value, artisanal product.
