La Papaya is a pioneering, high-altitude coffee estate located in the Saraguro region of Loja, Ecuador. Owned by producer Juan Peña, it is internationally recognized for its precision agronomy, experimental processing, and the cultivation of exceptional varieties like Mejorado and Geisha, which consistently produce clean, floral, and fruit-forward specialty coffees.
Hacienda La Papaya stands as a cornerstone of modern Ecuadorian specialty coffee. Located in the Saraguro region of the Loja province, the estate is situated at high elevations ranging from 1,800 to 2,200 meters above sea level. The project was initiated in 2009 by Juan Peña, a former rose producer who transitioned to coffee cultivation. Since its inception, the farm has served as a model for high-quality production, utilizing advanced agricultural technology and meticulous management to elevate the profile of Ecuadorian coffee on the global stage.
The terroir of La Papaya is defined by its 'dry tropical' highland climate. A critical factor in the quality of the coffee produced here is the significant diurnal temperature swing, which can reach up to 15°C. These warm days facilitate sugar development in the coffee cherries, while the cold nights slow the plant's metabolism, resulting in increased density and sweetness in the final cup. The soil composition, primarily clay loam, combined with the specific microclimate of the Saraguro valley, creates an environment where high-altitude varieties can thrive.
Varieties such as Mejorado, Typica, and Geisha are central to the farm's identity. The Mejorado variety, in particular, has gained significant acclaim for its complex flavor profile, often characterized by notes of stone fruit, delicate florals, and a bright, lemon-like acidity. The farm’s commitment to quality is further supported by a dedicated genetic bank and a focus on precision agronomy, ensuring that every lot is managed with scientific rigor from the nursery to the final export.
Processing at La Papaya is highly experimental and precise. Depending on the specific lot, the farm employs various methods, including washed, natural, and anaerobic fermentations. For instance, washed lots are typically depulped on the day of harvest, followed by controlled fermentation in tile tanks and drying on raised beds. This attention to detail in post-harvest processing has earned Juan Peña multiple accolades, including consecutive Sprudge Notable Producer awards, and has made his coffee a staple in high-level barista competitions.
The harvest calendar in this region is influenced by the specific altitude and climate of the Loja province, with peak activity often occurring toward the end of the calendar year. The farm also operates within the cultural context of the Saraguro people, an indigenous community with deep historical roots in the area. The labor practices at the farm often incorporate the 'minga,' an Andean tradition of community-based work, which reflects the integration of the estate into the local social fabric.
Beyond his own farm, Juan Peña has expanded his influence through CafExporto, an exporting project that manages other farms and supports local producers. This initiative has helped extend the reach of the Saraguro region's coffee, introducing more farmers to the rigorous standards and processing techniques pioneered at La Papaya. By fostering these connections, the project has helped establish Saraguro as a premier origin for specialty coffee, characterized by a distinct sense of place and a commitment to innovation.
Today, La Papaya is synonymous with the evolution of Ecuadorian coffee. For roasters and consumers, the name represents a benchmark for quality, consistency, and experimental excellence. As the farm continues to refine its practices and explore new processing frontiers, it remains a vital reference point for the potential of high-altitude, small-lot coffee production in South America.
