Las Flores

Finca Las Flores is a distinguished coffee estate situated in Acevedo, Huila, Colombia, currently managed by the Vergara family. The farm’s history began in 1990 when Edilberto Vergara and Nubia Ayure relocated from Cundinamarca to Huila, initially planting 18,000 trees on a modest plot. Over the decades, the farm has expanded significantly, evolving from a traditional high-volume operation into a benchmark for specialty coffee excellence under the leadership of their sons, Jhoan and Diego Vergara, who represent the third generation of producers.

The farm’s success is deeply rooted in the unique microclimate of the Huila region, where elevations ranging from 1,680 to 1,800 meters provide a significant temperature variance between day and night. This environmental stress encourages the coffee plants to develop increased mucilage and higher sugar content in the fruit, which serves as a critical foundation for the farm's sophisticated post-harvest processing techniques.

Under Jhoan Vergara’s direction, Las Flores has moved away from the exclusive production of standard varieties like Caturra. Today, the farm cultivates an extensive portfolio of specialty cultivars, including Pink Bourbon, Red Bourbon, Tabi, Java, Maracaturra, Pacamara, and Bourbon Sidra. This diversification has been essential to the farm's survival and its ability to command higher prices in the global specialty market.

Las Flores is perhaps best known for its rigorous, data-driven approach to processing. The farm utilizes advanced methods such as thermal shock treatments, extended anaerobic fermentation, and oxidative phases. These processes are carefully monitored in hermetic drying chambers to ensure stable moisture content and consistent quality, allowing the family to produce competition-grade lots that frequently feature complex, fruit-forward flavor profiles.

Jhoan Vergara has received significant international acclaim for his contributions to coffee processing. His achievements include winning first place at the 2019 Master of Coffee South Korea and securing top honors in the 'Process Coffee' category at the 2022 Top Roast Colombia competition. These accolades have solidified the farm's reputation as a leader in innovation within the Colombian coffee sector.
