Often associated with a former Nestlé breeding program, they are prized in specialty coffee for their exceptional cup profiles and frequent success in international barista competitions, despite ongoing uncertainty regarding their precise genetic lineages.
Mejorado and Sidra represent a fascinating, albeit enigmatic, chapter in modern specialty coffee. Both varieties are widely believed to have originated from a Nestlé-operated coffee breeding laboratory in the Pichincha province of Ecuador during the 1990s. The facility reportedly aimed to develop high-yielding, high-quality hybrids by crossing Ethiopian heirloom genetics with Bourbon-related stock. When the laboratory eventually closed, these varieties were never formally released to the commercial market, leading to their current status as 'unreleased' or 'lost' hybrids that have since proliferated through local farming networks.
The most significant challenge in understanding these varieties is the lack of formal documentation. Unlike established cultivars cataloged by organizations like World Coffee Research, Sidra and Mejorado lack a verified pedigree. While early industry lore suggested that Sidra was a cross between Typica and Bourbon, and that Mejorado was a Typica-related hybrid, modern genetic testing has frequently contradicted these claims. For instance, some analyses suggest that plants labeled as 'Typica Mejorado' contain no actual Typica lineage, instead appearing to be hybrids of Bourbon-related coffees.
In the field, these plants are noted for their physical characteristics. Sidra is often described as having a tall, sturdy stature. Because these varieties were developed in a research context, they were intended to balance agronomic performance with sensory quality. Producers choose to plant them primarily because they have demonstrated the ability to produce high-quality, complex cup profiles that command premium prices at auction and perform exceptionally well on the global competition stage, such as the World Barista Championship.
From a sensory perspective, both varieties are celebrated for their distinct, high-end characteristics. Sidra is frequently associated with intense floral notes and stone-fruit acidity, while Mejorado is recognized for its structural sweetness and depth. These attributes have made them highly sought after by roasters looking for unique, competition-grade lots. The cup quality is often cited as the primary driver for their adoption by specialty farmers, who are willing to cultivate these varieties despite the lack of official registration or standardized agronomic data.
It is important to note that the names 'Sidra' and 'Mejorado' may not refer to single, uniform genetic entities. There is a prevailing theory among researchers that these names have become umbrella terms used by farmers to describe various plants that share similar phenotypic traits or origins. Consequently, what one farmer grows as Sidra may be genetically distinct from what another farmer grows under the same name, complicating efforts to standardize their cultivation or disease resistance profiles.
Today, these varieties stand as a testament to the influence of informal knowledge transfer in the coffee industry. Their rise to fame was driven by the results in the cup rather than institutional promotion. As they continue to appear in high-scoring auction lots and winning competition routines, they highlight the tension between the industry's desire for genetic transparency and the reality of how coffee varieties are often traded, named, and propagated at the farm level.
