Pacamara is a deliberate hybrid of the Pacas and Maragogype coffee varieties, first developed in El Salvador in 1958. It is highly prized in specialty coffee for its exceptionally large bean size and complex, often tropical flavor profile, though it remains genetically unstable and highly susceptible to diseases like coffee leaf rust.
The Pacamara variety represents a significant milestone in 20th-century coffee breeding, born from the efforts of the Salvadoran Institute for Coffee Research (ISIC) in 1958. Researchers sought to combine the desirable traits of two distinct parents: the Pacas variety, a compact, high-yielding Bourbon mutation discovered in 1949, and the Maragogype, a Typica mutation famous for its massive bean size. The resulting hybrid was designed to marry the productivity and quality of the former with the physical stature and unique characteristics of the latter, creating a cultivar that has since become a staple of high-end specialty coffee production.
At the heart of the Pacamara experience is its physical appearance. The beans are visibly enormous, often larger than any other common Arabica variety. This size is not merely aesthetic; it presents a distinct challenge for roasters. Because the beans are so large, heat transfer to the center of the seed occurs differently than in smaller varieties. Roasters must carefully adjust their profiles to ensure the interior is fully developed without scorching the exterior, a process that requires precision and experience to avoid uneven roasting.
For the farmer, Pacamara is a high-maintenance, high-reward crop. While it is a dwarf or compact plant that allows for denser planting, it is notoriously genetically unstable. Unlike established, homozygous varieties that breed true, Pacamara plants do not consistently pass on their traits to the next generation. This lack of uniformity means that farmers must be vigilant in their selection and management. Furthermore, the variety is highly susceptible to coffee leaf rust and Ojo de Gallo, making it a risky investment in regions where these diseases are prevalent.
Despite these agronomic hurdles, the cup profile of a well-grown Pacamara is often extraordinary. When cultivated under optimal conditions, it is celebrated for its complex, vibrant acidity and heavy, syrupy body. Drinkers often encounter notes of tropical and stone fruits, herbal undertones, and rich chocolate. It is a frequent contender and winner in Cup of Excellence competitions, where its ability to produce a unique, high-scoring cup makes it a favorite among specialty roasters and discerning consumers.
However, the variety's performance is notoriously variable. At its worst, a poorly managed or improperly processed Pacamara can result in a thin, vegetal, or unremarkable cup. This inconsistency is a direct consequence of its genetic instability and the environmental sensitivity of the plant. Because it is not homogeneous, the quality can fluctuate significantly even within the same farm, depending on the specific micro-climate and the care provided during the growing and harvesting stages.
Today, the state of knowledge regarding Pacamara is supported by global evaluations, such as those conducted by World Coffee Research. These studies have confirmed its high susceptibility to disease and its lack of uniformity across different international sites. Despite these limitations, the variety remains a cornerstone of the specialty industry. It serves as a testament to the potential of intentional breeding to create unique sensory experiences, even when those experiences come with significant agricultural challenges that require constant innovation and dedication from producers.
