Tuke Yute is a prominent coffee producer based in Keramo Shanta, Sidama, Ethiopia, who operates a 10-hectare farm. He is recognized for his meticulous processing techniques, including anaerobic fermentation and cherry flotation, which produce high-quality, expressive specialty coffees that are highly sought after by international roasters.
Tuke Yute is a dedicated coffee producer operating in the Keramo Shanta region of Sidama, Ethiopia. He manages a 10-hectare farm where he lives with his two wives and twelve children. His operation is notable for its scale and influence within the local community, as he serves as a central processing hub for 30 registered outgrowers in the area. By providing these outgrowers with a second payment after the harvest, Yute fosters a sustainable and equitable relationship that supports the local coffee-growing economy.
The farm is situated at a high elevation of approximately 2,135 meters above sea level. This altitude is critical to the quality of the coffee produced, as it contributes to uniform ripening and the development of complex flavor profiles. Yute is known for his commitment to quality and innovation, employing advanced post-harvest techniques that distinguish his lots from more traditional Ethiopian production methods.
Among the techniques Yute utilizes are cherry flotation to ensure only the highest-density cherries are processed, and controlled anaerobic fermentation. In the anaerobic process, coffee cherries are sealed in oxygen-limited tanks, a method that intensifies the fruit-forward characteristics of the bean—often highlighting notes of raspberry, key lime, and pineapple—while maintaining clarity and sweetness. Following fermentation, the coffee is carefully shade-dried to ensure a consistent and high-quality result.
While much of Ethiopia’s coffee production is dominated by smallholders with plots under 2 hectares, Yute’s 10-hectare estate allows him to operate with a level of autonomy that facilitates direct export relationships. This structure enables roasters to source coffee directly from his farm, bypassing the traditional Ethiopian Commodity Exchange (ECX) system and ensuring greater traceability for the end consumer.
His work has gained significant recognition among specialty coffee roasters in the United States and beyond. Roasters frequently feature his lots as single-origin offerings, praising the cleanliness and vivid acidity of his natural and anaerobic-natural processed coffees. The variety commonly associated with his production is SL 74158, though Ethiopian heirloom varieties are also documented in his region.
Ultimately, Tuke Yute represents a modern shift in Ethiopian coffee production, where individual producers leverage technical expertise and direct market access to elevate the profile of their specific micro-region. His ability to balance large-scale processing for his community with the meticulous demands of the specialty market has made his farm a benchmark for quality in the Sidama region.
