Is distilled water good for brewing coffee?

The idea of using distilled water for coffee often stems from a desire for purity, under the assumption that if the water is 'cleaner,' the coffee will taste better. However, this is a misunderstanding of brewing science. Coffee extraction is a chemical process that relies on the interaction between water and the soluble compounds within the coffee bean. Minerals like magnesium and calcium act as the 'keys' that unlock these flavors.

When you use distilled water, you are essentially using a solvent that has been stripped of its ability to interact with the coffee. Without these dissolved minerals, the water lacks the chemical 'engine' needed to pull out the complex aromatics, acids, and sugars that define a great cup. The result is almost invariably a flat, uninspired brew that lacks the depth and vibrancy you would expect from your beans, regardless of how high-quality the coffee is.

Furthermore, distilled water can sometimes be aggressive in its search for minerals. In some cases, it may even leach minerals from the internal components of your brewing equipment, which can lead to long-term damage to your machine. While it is true that you want to avoid water with excessive mineral content—which can cause limescale and bitter, chalky flavors—the goal should be balance, not total removal.

In practice, the best water for coffee is filtered water that retains a moderate, balanced mineral content. If you are using a home filtration system, ensure it is not a deionizing or reverse-osmosis system that removes all minerals unless you are prepared to add them back in. For most home brewers, standard carbon-filtered tap water or bottled spring water provides the necessary mineral foundation to achieve a rich, balanced, and flavorful extraction.
