Finca Chelín is a third-generation coffee farm located in the Sierra Sur region of Oaxaca, Mexico. It is currently managed by Enrique López, who has established the farm as a center for high-quality coffee production and experimentation.

Innovations

Enrique López is recognized for his highly experimental approach to processing, including carbonic maceration and a unique 'hydronatural' method that involves soaking cherries in cold water during the drying cycle. The farm also conducts environmental research, such as programs to measure the amount of carbon captured by the farm annually.
