The story

Las Lajas has been producing coffee since 1840 and is currently managed by third-generation producers Oscar and Francisca Chacón. The farm transitioned to organic practices in the 1980s following the death of Oscar's father due to pesticide-related illness. In 2005, the couple joined the micromill revolution by purchasing their own depulper to gain independence from cooperatives.

Challenges

The farm has faced significant health risks from chemical usage, leading to their shift toward organic farming. Additionally, they have navigated environmental challenges, such as an earthquake in 2008 that cut off water access, forcing them to innovate their processing techniques.

Innovations

Las Lajas is recognized as a pioneer in Costa Rica for honey and natural processing, notably adopting these methods after a 2008 earthquake. They are also known for their 'Alma Negra' process and a commitment to organic, sustainable agriculture.
