Ají is a rare, high-quality coffee variety primarily cultivated in the Huila region of Colombia. The Ají variety represents a fascinating chapter in the ongoing discovery of coffee genetic diversity within Colombia. While often colloquially referred to as 'Bourbon Ají' by local farmers, genetic testing has confirmed that the plant has no biological relation to the Bourbon cultivar. Instead, it is classified as a 100% Ethiopian landrace, placing it within the same genetic lineage as other esteemed varieties such as Gesha, Sidra, and Chiroso. This discovery highlights the presence of diverse, wild-origin coffee populations thriving in the Colombian landscape.
The story of Ají’s emergence is rooted in the keen observation of producer José Hernán Salazar Benavides at his farm, Finca La Guaca, in Pitalito, Huila. During a harvest, Salazar noticed a group of trees that appeared morphologically distinct from his other crops. More notably, he detected a unique, sweet red pepper scent emanating from the cherries. The name 'Ají'—the Spanish word for chili pepper—was chosen to reflect both this distinct aromatic quality and the elongated, pepper-like shape of the ripening cherries.
Following his discovery, Salazar isolated these trees to process the coffee separately. When he submitted the resulting lot to the Colombia Cup of Excellence, the coffee’s performance and unique sensory profile caught the attention of organizers and judges. The surprise and intrigue surrounding the cup quality prompted further investigation, leading to the genetic testing that confirmed its status as a first-generation offspring of wild Ethiopian coffee forests.
In the field, Ají is noted for its distinct physical characteristics, which differ from the more common commercial varieties found in the region. Producers who cultivate it often emphasize the need for careful isolation to maintain the integrity of the variety. Because it is a relatively new and rare addition to the specialty market, its agronomic performance—such as specific disease resistance or yield potential—is still being documented by the small group of farmers currently working with it in Huila.
For the roaster and the consumer, Ají is celebrated for its high-end sensory attributes. The cup profile is frequently described as having intense sweetness, syrupy body, and complex, vibrant acidity. Common tasting notes include brambleberry, stone fruits like peach or mango, citrus blossom, and occasionally a piquant, spicy finish that echoes its namesake. These qualities have made it a sought-after micro-lot for specialty roasters looking to showcase the potential of rare, landrace-derived coffees.
Producers choose to plant Ají primarily for its premium market potential. As specialty coffee consumers continue to seek out unique, high-scoring varieties, the ability to offer a rare, genetically distinct coffee provides a significant competitive advantage. By focusing on high-quality processing methods, such as anaerobic washing or natural processing, farmers are able to amplify the inherent characteristics of the Ají variety, further elevating its value in the global specialty market.
Today, the story of Ají stands as a testament to the value of biodiversity in coffee farming. It serves as a reminder that within established coffee-growing regions, there remain hidden genetic treasures waiting to be identified.
