Quick answer — what is ASUVIM central mill and member farms?

ASUVIM (Asociación Integral Unidos para Vivir Mejor) is a smallholder coffee association based in the Sololá region of Guatemala, near Lake Atitlán. It is significant for its commitment to organic and sustainable farming practices, utilizing a central mill to process high-quality lots from diverse ethnic communities to ensure consistency and environmental stewardship.

The real story

ASUVIM, which stands for Asociación Integral Unidos para Vivir Mejor, is a small-scale coffee growers' association located in the highlands of Sololá, Guatemala. The organization operates in the mountainous terrain surrounding Lake Atitlán, a region renowned for its unique microclimate and rich volcanic soils. The association is composed of approximately 93 members, including both men and women, who represent distinct ethnic groups, specifically the Maya Kiche in Paquip and the Tzutujil in San Juan La Laguna. This cultural diversity is a cornerstone of the association's identity, as they work collectively to preserve their traditional knowledge while modernizing their agricultural practices.

The association’s primary objective is to produce and commercialize high-quality organic coffee while maintaining environmental sustainability. Their farms are situated at high altitudes, often beginning at 1,900 meters above sea level, which contributes to the slow maturation of the coffee cherries and the development of complex flavor profiles. The producers cultivate a variety of Arabica cultivars, including Bourbon, Caturra, Catuai, and Pache, which are well-suited to the specific conditions of the Guatemalan highlands.

Central to ASUVIM’s operations is its central mill, or washing station, located in Paquip. This facility serves as the hub for the association's quality control efforts. Each evening, member farmers bring their freshly harvested, ripe coffee cherries to this central location for processing. By centralizing the wet milling process, the association ensures that the coffee is handled with consistent standards, from the initial depulping to the final drying stages. The mill utilizes ecological processing methods, including water recirculation, to minimize the environmental impact on the surrounding Lake Atitlán ecosystem.

ASUVIM operates under rigorous certification standards, including organic and Rainforest Alliance certifications, and is also Fairtrade certified. These certifications reflect the members' commitment to sustainable production and social equity. The association is also part of a larger network, serving as one of 15 secondary associations that deliver coffee to the primary cooperative, Manos Campesinas, which helps bridge the gap between smallholder farmers and international specialty coffee markets.

For the roaster and the consumer, ASUVIM coffee is recognized for its clean, vibrant cup profile. Typical sensory characteristics include notes of stone fruit and milk chocolate, supported by a syrupy body. These qualities are a direct result of the combination of high-altitude cultivation, careful selection of ripe cherries, and the standardized processing at the central mill. The consistency achieved through this collective model allows these smallholders to compete effectively in the global specialty coffee market.

Beyond the cup, the story of ASUVIM is one of community resilience and environmental preservation. By working together, the members are able to access resources and market opportunities that would be difficult to secure as individual farmers. Their focus on climate-smart practices and organic farming not only protects the biodiversity of the Lake Atitlán region but also ensures the long-term viability of their coffee production in the face of changing environmental conditions.
