Depending on the specific protocol, the coffee may undergo extended fermentation—sometimes up to 96 hours—before being thoroughly washed and dried on raised beds for 12 to 14 days. The station also produces honey-processed lots, where the mucilage is left on the bean during drying to enhance sweetness and body while maintaining the clarity typical of the region.
Beyond processing, the management at Danche emphasizes environmental stewardship and community development. SNAP has implemented initiatives such as waste recycling at the station and has trained thousands of farmers in climate-smart agriculture and crop diversification.
