Daterra Coffee, founded by Luís Norberto Pascoal, originated in the 1980s with a vision to merge high-quality specialty coffee production with environmental and social responsibility. The move to the Cerrado was inspired by a partnership with Dr. Ernesto Illy, who recognized the potential of the region's high-altitude terroirs and distinct, dry climate to produce unique flavor profiles while allowing for precise control during the harvest and drying seasons.

What distinguishes Daterra from traditional large-scale operations is its unique organizational structure. Rather than managing their land as a monolithic plantation, the company operates through a system of over 200 'mini-farms,' each ranging from 5 to 15 hectares. This granular approach allows for GPS-based tracking and meticulous data collection for every specific plot, effectively treating each mini-farm as an individual laboratory. This methodology enables the company to maintain high levels of traceability and consistency, which are often difficult to achieve at scale.

Innovation is central to Daterra’s identity, particularly through their 'Masterpiece' collection. These lots are the result of intensive experimentation with exotic and hybrid coffee varieties, as well as novel processing and drying techniques. A notable example of their research-driven approach is their work with the Laurina variety, a low-caffeine cultivar that the company spent over a decade adapting to their specific soil and climate conditions in partnership with the Agronomic Institute of Campinas (IAC).

The company was among the first in Brazil to achieve Rainforest Alliance certification and has long held B Corp status.
