The story of El Borbollón begins with the Alvarez family, whose involvement in coffee cultivation spans over 130 years and six generations. The lineage traces back to Rafael Alvarez Lalinde, who emigrated from Colombia to El Salvador in 1892. Upon his arrival, he established Finca La Reforma on the fertile, humid slopes of the Santa Ana Volcano, bringing with him high-quality coffee seeds that would form the foundation of the family’s enduring legacy in the region.

Today, the El Borbollón operation is centered around a mill that processes coffee from the family’s own estates, most notably Finca La Reforma and Finca Santa Maria. These farms are situated in the Apaneca-Ilamatepec mountain range, an area celebrated for its rich volcanic soil and ideal microclimates. The management of these lands has passed through four generations of the Alvarez family, with current operations overseen by Eduardo Alvarez, who continues the family’s focus on quality-driven production and meticulous farm management.

The production process at El Borbollón is defined by a rigorous attention to detail. Coffee cherries are hand-picked by trained workers between December and March to ensure only fully mature fruit is harvested. Once delivered to the mill, the cherries are separated by farm and quality. The traditional washed process involves pulping and fermenting the coffee for 16 to 20 hours, followed by drying on clay patios or raised beds. This consistency has made El Borbollón a trusted name for roasters seeking reliable, sweet, and clean profiles, often characterized by notes of chocolate, caramel, and citrus.

While the farms are predominantly planted with Red Bourbon, the family has demonstrated a commitment to innovation by experimenting with other varieties, including Yellow and Orange Bourbon, as well as Pacas and SL28. This balance between honoring historical varieties and exploring new agricultural possibilities allows the mill to maintain its reputation for excellence. The quality of their output is further evidenced by historical accolades, such as Finca La Reforma’s third-place finish in the 2011 Cup of Excellence, where it achieved an SCA score of 91.72.

Beyond production, the Alvarez family is deeply integrated into the social fabric of the Santa Ana region. Their corporate social responsibility initiatives include operating health clinics to provide medical advice and education, as well as funding free schooling for children living on their farms. These efforts to combat regional malnutrition and improve educational access reflect a philosophy that views long-term sustainability as inseparable from the quality of the coffee produced.
