Finca Deborah is a high-altitude, shade-grown coffee estate in Volcán, Panama, renowned for producing world-class Geisha variety coffee. It is widely considered a benchmark in specialty coffee, with its meticulously processed lots frequently powering champions at the World Barista Championship and other global competitions.
Finca Deborah is a preeminent coffee estate located in the Chiriquí highlands of Volcán, Panama. Situated at an extreme altitude exceeding 1,900 meters, the farm benefits from a unique microclimate where temperatures can drop to 10 degrees Celsius at night. This environment, characterized by volcanic, nutrient-rich soil and persistent cloud cover, provides the ideal conditions for the slow maturation of the Geisha coffee variety, resulting in the complex, floral, and sweet cup profiles for which the farm is internationally celebrated.
The farm was established in 2008 by Jamison Savage, who transitioned from a career in finance to coffee production. Savage’s approach is defined by a commitment to environmental stewardship and technical innovation. The estate operates as a shade-grown plantation, maintaining a balanced rainforest ecosystem that supports local bird and wildlife populations. To minimize its environmental footprint, the farm utilizes a solar power system to supply electricity to its processing facilities and worker housing, and it strictly avoids the use of herbicides or harmful chemicals.
Innovation in processing is a cornerstone of Finca Deborah’s reputation. Since 2016, Savage has collaborated with industry experts, such as Saša Šestić, to implement advanced techniques, including Carbonic Maceration (CM) and various washed and natural processing methods. These experimental approaches are designed to push the boundaries of flavor expression, allowing the farm to produce distinct, highly sought-after lots that consistently perform at the highest levels of the specialty coffee industry.
Finca Deborah’s influence on the global stage is perhaps best documented through its success in competitive coffee. The farm’s coffees have been a staple of the World Barista Championship (WBC) for years, famously contributing to Berg Wu’s 2016 world title. The farm’s dominance continued into 2024, when all three top-placing competitors at the World Barista Championship—representing Indonesia, Australia, and Japan—selected Finca Deborah Geisha lots for their routines, underscoring the farm's consistency and quality.
Beyond the competition circuit, the farm operates under the broader umbrella of Savage Coffees, a project that includes a roastery and, as of late 2024, a retail presence in the United States. This vertical integration allows the team to maintain control over the coffee from the farm level through to the final roast, ensuring that the specific characteristics of their terroir are preserved for the consumer.
For the specialty coffee drinker, Finca Deborah represents the intersection of extreme terroir and rigorous, science-led processing. The farm’s ability to produce high-clarity, aromatic Geisha coffee has set a standard for what is possible in high-altitude Panamanian coffee production.
