La Bandera is a historic coffee farm and micromill located in the Tarrazú region of Costa Rica, currently managed by producer Diego Hidalgo. It is recognized for its high-altitude production and meticulous natural processing, which consistently yields complex, fruit-forward specialty coffees that are highly sought after by international roasters.
La Bandera is a multi-generational coffee estate situated in the high-altitude mountains of the Tarrazú canton in the Los Santos Valley of Costa Rica. The land has been in the family of producer Diego Hidalgo for nearly 200 years, though the farm transitioned into active coffee production in 1965 under the management of Diego’s father. For decades, the family operated as members of the local cooperative, Coopedota, before evolving into the independent operation known today as the La Bandera Micromill.
Diego Hidalgo’s connection to the land is deeply rooted in his upbringing, as he and his siblings spent their formative years assisting with the harvest to support their education and household. After spending time living in the United States, Diego returned to the family estate to take the helm. His leadership has been defined by a shift toward specialized processing techniques and a focus on direct trade relationships, allowing the farm to gain significant recognition in the global specialty coffee market.
The farm’s success is largely attributed to its unique terroir, located at elevations reaching approximately 1,950 meters. This high altitude, combined with the specific microclimate of the Tarrazú region, provides the ideal conditions for slow cherry maturation. Diego Hidalgo has invested heavily in the infrastructure of the La Bandera Micromill, which allows for precise control over the post-harvest processing of his crops, ensuring that the inherent qualities of the coffee are preserved from the tree to the final export.
La Bandera is particularly noted for its expertise in natural processing. By carefully managing the drying process—often involving slow, sun-dried methods—the farm produces coffees that exhibit distinct, vibrant flavor profiles. Roasters frequently highlight notes of stone fruit, berries, and tropical fruits, such as mango, pear, and apricot, in their offerings from the farm. These flavor characteristics have made La Bandera a staple for specialty roasters who prioritize transparency and high-quality, single-origin lots.
Beyond the standard production, the farm has also experimented with various coffee varieties, including the highly regarded Gesha. The ability to produce such diverse and high-scoring lots has solidified La Bandera’s reputation as a premier producer in Costa Rica. The farm’s commitment to quality is reflected in the way it is marketed by international partners, who often emphasize the specific lot, altitude, and processing method to showcase the producer's dedication to the craft.
