Angelo Moriondo

Angelo Moriondo, born in 1851 in Turin, Italy, occupies a foundational position in the history of coffee technology. In an era when coffee preparation was a slow, manual process, Moriondo sought to address the growing demand for efficiency in busy cafes. His primary innovation was the conceptualization of a machine that utilized steam pressure to force water through coffee grounds, a radical departure from the gravity-fed or immersion methods common at the time.

On May 16, 1884, Moriondo was granted a patent (No. 33/256) for his invention, titled 'New steam machinery for the economic and instantaneous confection of coffee beverage.' He presented this device at the General Expo of Turin that same year, where it earned a bronze medal. The machine was constructed with the assistance of a mechanic named Martina, who worked under Moriondo’s direct supervision to bring the inventor's vision to life.

Technically, Moriondo’s machine functioned by using a large boiler to heat water and generate steam. This steam pressure was then used to push water through a bed of coffee grounds. Unlike the modern espresso machines that baristas use today to pull individual shots, Moriondo’s device was designed for bulk brewing. It was a large, cumbersome apparatus intended to serve multiple customers quickly in a high-volume cafe environment, rather than producing a single, concentrated 'espresso' as we define it today.

Because the machine was built for bulk production, it lacked the precise pressure control and extraction parameters—such as the specific 9-bar pressure standard—that characterize modern espresso. However, its significance lies in the mechanical principles it introduced. It was one of the first Italian bar machines to control the supply of steam and water separately, effectively proving that steam-driven pressure could significantly reduce brewing time.

Moriondo never commercialized his invention on a mass scale, and his machine remained largely a precursor rather than a direct ancestor of the machines that would later define the 20th-century coffee industry. It was not until the early 1900s that figures like Luigi Bezzera and Desiderio Pavoni refined these concepts, moving toward the individual-serving, high-pressure extraction systems that eventually became the global standard for espresso.

For the modern coffee professional, Moriondo represents the transition from artisanal, slow-brewing traditions to the industrialization of coffee. His work highlights the shift toward 'instantaneous' preparation, a goal that continues to drive innovation in coffee technology today.
