Luigi Bezzera

Luigi Bezzera is a pivotal figure in the history of coffee technology, widely recognized for developing the first machine capable of producing a single serving of espresso in under a minute. During the early 20th century, Italian factory owners sought to minimize the time employees spent on coffee breaks. At the time, coffee was typically brewed in large batches, a process that was both slow and inefficient. Bezzera, a Milanese mechanic, addressed this productivity challenge by engineering a device that utilized steam and pressure to force hot water through a puck of ground coffee.

In 1901, Bezzera filed a patent for his espresso machine, which introduced the concept of the removable portafilter—a design element that remains standard in modern espresso equipment. While Angelo Moriondo had patented a bulk-brewing espresso machine earlier in 1884, Bezzera’s design was the first to focus on the individual cup, effectively creating the prototype for the modern espresso experience. His invention allowed for a concentrated, intense beverage that could be prepared rapidly, fundamentally changing how coffee was consumed in Italy.

Following his initial patent, Bezzera’s technology was further refined and eventually acquired by Desiderio Pavoni, who helped commercialize the machine under the La Pavoni brand. This transition marked the beginning of the espresso machine's widespread adoption in cafes across Milan and beyond. The machine’s ability to produce a thick, flavorful extraction—often topped with the signature crema—solidified espresso as the cornerstone of Italian coffee culture.

For the modern coffee drinker, Bezzera’s legacy is found in every cafe that serves espresso. His work shifted the focus of coffee preparation from slow, batch-based methods to the precise, high-pressure extraction that defines specialty coffee today.
