Aquapulping
Aquapulping is a mechanical processing method that uses specialized machinery to remove the mucilage from coffee parchment immediately after pulping, bypassing the traditional, time-consuming fermentation stage used in fully washed coffee processing.
What is aquapulping? It is a modern, efficient approach to post-harvest processing that replaces the traditional, water-intensive fermentation tanks with mechanical demucilaging. In a standard washed process, coffee cherries are pulped and then left in tanks for hours or days to allow natural microbes to break down the sticky mucilage layer. Aquapulping, often performed using an eco-pulper or a mechanical demucilager, uses friction and water pressure to scrub this layer off the parchment in a matter of minutes.
This method is highly valued by producers for its consistency and environmental benefits. By eliminating the need for large fermentation tanks, farms can significantly reduce their water consumption and wastewater output, which is a critical concern in many coffee-growing regions.
