Body in coffee refers to the tactile sensation of weight, thickness, and density that the liquid creates on your palate. It is often compared to the difference between skim milk and whole milk.
Body is one of the primary quality attributes evaluated during professional coffee cupping. It describes the physical weight or 'heaviness' of the coffee as it sits on your tongue and coats your mouth. When you hear a coffee described as 'syrupy,' 'creamy,' or 'tea-like,' you are hearing a description of its body. It is not a flavor, but a physical sensation that significantly impacts how we perceive the overall intensity of a cup.
To visualize body, think of the difference between skim milk and whole milk. Skim milk feels thin and light, while whole milk has a thicker, more substantial texture. Coffee follows a similar spectrum. A light-bodied coffee might feel delicate, clean, or tea-like, which is often preferred for highlighting subtle, floral, or acidic notes. A full-bodied coffee feels heavy, coating, and rich, which can provide a satisfying, lingering presence that stands up well to milk or darker roast profiles.
Body is primarily produced by dissolved solids and suspended oils (lipids) extracted from the coffee bean. This is why brewing methods are the most significant external factor in determining body. Methods that use metal filters, such as the French press or espresso machines, allow more oils and fine particles to pass into the final cup, resulting in a heavier body. Conversely, paper filters absorb many of these oils, leading to a lighter, cleaner body.
Beyond brewing, the origin and roast level of the coffee also play a role. Coffees grown at lower altitudes or those roasted to a darker level often exhibit more body due to the breakdown of cellular structures and the release of oils. In practice, understanding body helps you choose the right coffee for your mood. If you want a light, refreshing morning cup, look for a washed, high-altitude coffee brewed with a paper filter. If you crave something substantial and comforting, a natural-processed coffee or an espresso-based drink will provide that desired weight.
