Bypass brewing is a technique where a portion of the total brew water is added directly to the carafe rather than through the coffee grounds, allowing for independent control over extraction and strength.

Bypass brewing is a method used to manage the strength and extraction of a coffee brew by separating the total water volume into two parts. In a standard brew, all the water passes through the coffee bed. In bypass brewing, a portion of the water—the 'bypass'—is added directly to the brewed coffee in the carafe, effectively diluting the concentrate to the desired strength without further extracting the grounds.

What is the purpose of bypass brewing? It solves a fundamental problem in coffee brewing: the relationship between strength and extraction. In a single-pass brew, changing the ratio of coffee to water affects both how much flavor is extracted and how strong the final cup tastes. If a coffee is perfectly extracted but too strong, simply adding more water to the brew bed would lead to over-extraction, resulting in bitter or astringent flavors. Bypass brewing allows the brewer to maintain the ideal extraction level while adjusting the strength to the drinker's preference.

This technique is particularly useful in commercial batch brewing. When brewing large volumes, running all the water through the coffee bed can lead to excessively long contact times, which can cause the brew bed to overflow or lead to over-extraction. By using a bypass valve, the brewer can keep the contact time within an optimal range while still producing the required volume of coffee.

It is frequently used in competition settings where baristas need to dial in the exact strength of their coffee without compromising the delicate flavor notes achieved through careful extraction. For the home brewer, it offers a way to experiment with different strengths without needing to change the grind size or the amount of coffee used.
