Screen size is a fundamental metric in the coffee industry used to grade green coffee beans. The process involves passing the beans through a series of metal screens with holes of specific diameters. These screens are measured in 1/64th of an inch increments. For example, a 'Screen 18' means the holes are 18/64 of an inch in diameter. Beans that are too large to pass through a screen are retained, allowing for a uniform sorting of the harvest.

Why does screen size matter? Primarily, it is used as a proxy for quality and consistency. Larger beans are often perceived as being more mature and having a more developed flavor profile, which is why many specialty grades require a minimum screen size. Furthermore, sorting by size is essential for the roaster. Beans of similar size tend to roast more evenly because they have similar heat absorption and moisture content characteristics. If a batch contains a mix of very large and very small beans, the smaller ones may roast faster and potentially burn, while the larger ones may remain underdeveloped.

In addition to roasting consistency, screen size is a standard part of the coffee supply chain's language. Different regions have different grading standards based on screen size. For instance, some origins may classify their highest-grade coffee as 'Screen 17/18,' while others might use different terminology. This standardization helps buyers and sellers communicate the quality and value of a lot before it is even roasted.

In practice, screen size is one of the first things a green coffee buyer looks at when evaluating a sample. While it is not the only indicator of quality—density, moisture content, and sensory attributes are equally important—it provides a quick and objective way to assess the uniformity of a lot. For the roaster, understanding the screen size of their green coffee allows them to adjust their roast profiles to ensure the best possible outcome in the cup.
