A roaster who ignores moisture content will struggle to achieve consistency, as the same roast settings will produce different results depending on how much water is in the bean.
Beyond moisture content, professionals are increasingly looking at 'water activity'—a measure of the free water available for microbial growth. While moisture content tells you how much water is in the bean, water activity tells you how that water behaves. Together, these two measurements provide a complete picture of the coffee's stability and potential shelf life.
In practice, moisture content analysis is a fundamental quality control step. It protects the investment of the producer, the importer, and the roaster.
