Density Sorting

Density sorting is a critical quality control measure that occurs both during wet processing and at the dry mill. Because the density of a coffee bean is closely linked to its maturity, size, and overall quality, separating beans by weight is one of the most effective ways to ensure a uniform and high-quality product.

What is density sorting? During the wet processing stage, this often happens in washing channels or flotation tanks, where less dense, defective beans float to the surface and are removed. At the dry mill, this process is more sophisticated, often using gravity tables that vibrate to separate beans based on their specific gravity. The result is a lot of coffee that is uniform in size and density, which is essential for consistent roasting.

Why does this matter to the drinker? A lot of coffee that is uniform in density will roast more evenly. If a bag of green coffee contains beans of widely varying densities, the roaster will struggle to apply heat consistently, leading to a mix of underdeveloped and over-roasted beans. By ensuring that the coffee is density-sorted, the producer provides the roaster with a reliable product that can be roasted to its full potential, resulting in a cup with better clarity, sweetness, and balance.

In practice, density sorting is a hallmark of professional coffee production. It is the difference between a commodity-grade coffee, which may contain a mix of light and heavy beans, and a specialty-grade coffee, which has been carefully refined.
