Drying moisture targets are the critical benchmarks that define the success of the post-harvest drying process. Once coffee is harvested and processed, it contains a high level of water. If this water is not removed to a safe level, the coffee will be susceptible to mold, bacteria, and rapid degradation. The industry standard for safe storage and shipping is generally between 10% and 12% moisture content.
Reaching these targets is a precise science. If the coffee is under-dried (above 12%), it remains biologically active and prone to mold growth, which can introduce "musty" or "moldy" defects that are irreversible. If the coffee is over-dried (below 10%), the beans become brittle and lose their structural integrity, which can lead to "stale" or "papery" flavors and a loss of the vibrant acidity and sweetness that define specialty coffee.

This is a significant improvement over traditional methods, which relied on visual cues or the "bite test"—a subjective and often unreliable way to judge moisture levels.
For the supply chain, moisture targets are non-negotiable. Green coffee importers and roasters often test the moisture content of incoming lots to ensure they meet the agreed-upon standards. Coffee that arrives with moisture levels outside of the target range is often rejected or sold at a significant discount, as it poses a risk to the quality of the roaster's final product.
