Finish refers to the final sensory impression of a coffee, encompassing both the aftertaste and the physical sensation left on the palate. It is the concluding note of the coffee experience.
The finish is the concluding chapter of the coffee tasting experience. While often used interchangeably with 'aftertaste,' the finish is a broader term that encompasses the entire sensation left in the mouth as the coffee is swallowed or expectorated. It includes the lingering flavors, the tactile sensation (such as dryness or silkiness), and the overall 'cleanliness' of the palate after the coffee is gone.
What is the finish in coffee? It is the final evaluation of the coffee's quality. A 'clean' finish means the coffee leaves the palate feeling refreshed, with no lingering negative sensations like bitterness or astringency. A 'complex' finish might reveal new, subtle flavors that were not present during the initial sip. Conversely, a 'harsh' or 'rough' finish is a common indicator of roasting defects or poor processing, such as under-fermentation or improper drying.
Why does the finish matter? It determines the 'drinkability' of the coffee. A coffee with a long, sweet, and pleasant finish is one that you want to keep drinking. For professionals, the finish is a critical scoring category in the SCA cupping protocol, as it reflects the overall balance and quality of the bean.

A light roast might have a bright, tea-like finish, while a dark roast might have a heavy, chocolatey, or smoky finish. If you find your coffee has an unpleasant finish, it may be a sign that your extraction is off—either over-extracted (bitter finish) or under-extracted (sour/salty finish). By paying attention to the finish, you can better understand how your brewing variables affect the final cup and refine your technique to achieve a more satisfying, balanced result.
