Fluid bed roasting is a coffee roasting method that uses a high-velocity column of hot air to suspend and agitate the beans, ensuring uniform heat transfer and a clean, bright flavor profile.

Fluid bed roasting, often called 'air roasting,' is a distinct alternative to the traditional drum roasting method. Instead of relying on a rotating metal drum to tumble the beans, a fluid bed roaster uses a powerful fan to force hot air upward through a screen, creating a 'fluidized' bed where the beans are suspended in the air stream. This constant motion ensures that every bean is surrounded by hot air, leading to highly efficient and uniform heat transfer.

One of the primary advantages of fluid bed roasting is the speed and cleanliness of the process. Because the beans are constantly moving and the chaff—the thin, papery skin of the coffee—is immediately blown away by the airflow, the coffee is less likely to pick up the 'smoky' or 'roasty' flavors that can sometimes occur in drum roasters if chaff burns against the hot metal. This often results in a cup that highlights the inherent acidity and bright, origin-specific characteristics of the coffee.

While fluid bed roasters are less common in large-scale commercial production compared to drum roasters, they are highly favored by many specialty roasters and home enthusiasts for their precision and consistency. The ability to control airflow and temperature independently allows for a very controlled roast profile. However, because the heat transfer is primarily convective, the roast can progress much faster than in a drum roaster, requiring the operator to be highly attentive to the roast curve to avoid underdevelopment.
