The harvest season is the most critical window in the coffee calendar. Because coffee is an agricultural product, its availability is entirely dependent on the biological cycle of the coffee tree. The harvest season begins when the cherries reach their optimal ripeness—a state often measured by color and sugar content—and ends when the last of the cherries are picked from the branches.

This season varies wildly depending on where the coffee is grown. Factors such as altitude, rainfall patterns, and proximity to the equator determine when the harvest occurs. For example, countries in the Northern Hemisphere typically harvest between late autumn and early spring, while Southern Hemisphere countries often harvest during the middle of the calendar year. Some regions, particularly those near the equator, may experience two distinct harvest seasons, allowing for a more continuous supply of fresh coffee.

During the harvest season, the entire community at the origin is mobilized. This is a labor-intensive period that requires careful coordination to ensure that cherries are picked at the right time. Whether the farm uses selective hand-picking or mechanical harvesting, the goal is to capture the fruit at its peak. Once picked, the cherries must be processed immediately to prevent spoilage, making the harvest season a high-pressure time for washing stations and mills.

For the coffee drinker, the harvest season is the ultimate indicator of freshness. Coffee is at its best when it is "new crop," meaning it has been harvested and processed within the last few months. As coffee sits in storage, it loses its vibrant aromatics and bright acidity, eventually becoming "past crop" or "old crop." By understanding the harvest season of a specific origin, you can better predict when your favorite coffees will be at their peak. In practice, buying coffee that aligns with the most recent harvest season is the single most effective way to ensure you are drinking the freshest, most flavorful coffee possible.
