What are long-fermentation naturals? They are a variation of the natural process where the coffee cherries are held in a controlled environment—often in sealed tanks or bags—for an extended period before they are moved to drying beds. In a standard natural process, the cherries are spread out to dry immediately after harvest. In a long-fermentation natural, the cherries undergo a 'pre-drying' fermentation phase.
