Lot Separation

Lot separation is the practice of keeping specific batches of coffee separate throughout the harvesting, processing, and milling stages to preserve the unique quality and characteristics of a particular harvest or farm section.

Lot separation is a critical component of the specialty coffee supply chain. At its core, it is the logistical process of ensuring that coffee from a specific farm, a specific variety, or even a specific day of harvest does not get mixed with other, potentially lower-quality coffee. Without rigorous lot separation, the distinct qualities of a high-performing harvest would be diluted by the average quality of the larger regional crop.

When asking what is lot separation, one must consider the labor and infrastructure required at the origin. It begins at the farm, where pickers may be instructed to harvest only from specific blocks of trees. During processing, the coffee must be kept in separate fermentation tanks and on separate drying beds. This requires significant organization and space, which is why lot separation is often associated with higher-quality, specialty-grade coffee.

For the roaster and the consumer, lot separation is the reason we can enjoy 'single-estate' or 'microlot' coffees. It allows for the traceability that defines the modern specialty market. When a roaster buys a separated lot, they are paying for the assurance that the coffee in the bag is consistent and representative of the specific conditions under which it was grown and processed. It prevents the 'averaging out' of flavor that occurs in large-scale commercial blending.

In practice, lot separation means that the coffee you are drinking has been treated with intentionality. It is the difference between a generic commodity coffee and a coffee that tells a specific story of a harvest. By maintaining these boundaries, producers can showcase their best work, and roasters can highlight the unique terroir of a specific farm or even a specific hillside, providing a more transparent and rewarding experience for the coffee drinker.
