The relationship between temperature and taste is one of the most critical factors in sensory evaluation. As coffee cools from a hot, freshly brewed state to room temperature, the human palate becomes increasingly sensitive to different flavor compounds. This is why professional cuppers wait for the coffee to drop in temperature before beginning their evaluation.
When coffee is very hot, the heat can mask subtle flavors and suppress the perception of sweetness. High temperatures often emphasize bitterness and can make it difficult to distinguish between complex aromatic notes. As the coffee cools, the perceived acidity often becomes more vibrant, and the sweetness—derived from sugars developed during the roasting process—becomes more prominent. What is the ideal temperature for tasting?
