Vacuum-sealed fermentation is a processing technique where coffee cherries or beans are fermented inside airtight, vacuum-sealed bags to create an anaerobic environment, allowing producers to precisely control microbial activity and enhance specific flavor profiles.
Vacuum-sealed fermentation, often categorized under experimental processing, is a method used by coffee producers to exert extreme control over the fermentation environment. By placing coffee cherries or depulped beans into heavy-duty, airtight bags and removing the oxygen, producers create a strictly anaerobic space. This prevents the growth of aerobic bacteria and molds while favoring specific yeasts and lactic acid bacteria that thrive in oxygen-free conditions.
In practice, this method is used to push the boundaries of what a coffee can taste like. Because the environment is sealed, the gases produced during fermentation—such as carbon dioxide—cannot escape, which can lead to unique chemical transformations within the bean. This often results in heightened fruit-forward notes, increased perceived sweetness, and a distinct, often 'funky' or wine-like complexity that is difficult to achieve through traditional open-air fermentation tanks.
