During the bloom time, the hot water triggers a rapid release of this gas. You can see this happening as the coffee grounds bubble and expand—this is the 'bloom.' If you do not allow for this degassing phase, the trapped gas can create a barrier that prevents water from fully penetrating the coffee grounds. This leads to uneven extraction, where some grounds are over-extracted while others remain dry, resulting in a cup that may taste thin, sour, or inconsistent.

To perform a proper bloom, pour just enough water to saturate the grounds—usually about twice the weight of the coffee—and wait. The duration of the bloom time can vary based on the freshness of the roast. Very fresh coffee, which has had less time to degas naturally, will bloom more vigorously and may require a slightly longer bloom time. As coffee ages, it releases gas more slowly, and the bloom will be less pronounced.

In practice, the bloom is your first opportunity to assess the quality of your coffee. A healthy, active bloom is a sign of fresh beans. If you pour water over your grounds and see very little bubbling, it is a strong indicator that your coffee is stale and has lost much of its aromatic potential.
