What is the specialty coffee grading system?

The specialty coffee grading system is the industry's primary tool for ensuring quality and transparency. It is not merely a marketing term; it is a rigorous, two-part evaluation process. First, a 350-gram sample of green coffee is physically inspected for defects—such as black beans, sour beans, or foreign matter. If the sample contains too many defects, it is disqualified from specialty status before it is even tasted.

Once the green coffee passes the physical inspection, it undergoes a sensory evaluation known as 'cupping.' During this process, a certified Q Grader or trained professional evaluates the coffee across several key attributes, including aroma, flavor, acidity, body, and balance. Each attribute is scored on a scale, and the final tally determines the coffee's grade.

On the SCA’s 100-point scale, any coffee scoring 80 points or above is officially designated as 'specialty.' Coffees scoring below 80 are generally classified as commercial or commodity-grade. This threshold is critical because it provides a common language for farmers, traders, and roasters to communicate value, ensuring that high-quality production is rewarded with higher prices.

In practice, this system helps you understand what you are buying. A coffee scoring 80–84.99 is considered 'very good' specialty, while those in the 85–89.99 range are 'excellent,' and 90+ scores represent 'outstanding' lots that are exceptionally rare. By relying on these standards, the industry maintains a focus on consistency and quality, moving away from the inconsistent nature of commodity-grade coffee.
