Don Cayito

The story

Don Cayito is a family-run farm operated by the Calderón Castillo family in Santa María de Dota, Costa Rica. While the family has cultivated coffee for generations, they historically sold their cherries to other processors. In 2009, Ricardo and Lourdes Calderón, along with their children, established their own micro-mill, Los Ángeles, to gain control over their processing and focus on quality.

The family established their own micro-mill as a strategic response to the volatility of the international coffee market and the inherent difficulties associated with coffee farming.

Innovations

The farm operates its own micro-mill, Los Ángeles, which allows the family to manage the entire post-harvest process, including milling and quality control, to ensure specific flavor profiles.
