The story

Victor Dota began growing coffee in 2022 after producing short-cycle crops and working on neighboring farms. He learned from producer Abel Salinas and sourced his Typica Mejorado seed from him.

Challenges

Only about 0.5 hectare of the four-hectare property was planted with coffee when documented, and Victor rented drying-bed space from a neighbor.

Innovations

For the documented washed lot, ripe cherries were floated, held in the hopper for 24 hours, depulped and soft-washed, then the wet parchment rested submerged for another 24 hours before final washing. Drying took 10 to 15 days on rented neighboring beds.
