La Huella

The story

La Huella is a family-run coffee project led by Pedro and Katarina Moss in the Boquete region of Panama. The operation centers around their high-altitude farm, Finca Kristina, and includes a micro-mill and roastery facility known as Alpha 1. The project has evolved over a decade into a direct-trade partnership focused on producing and marketing unique micro-lots from the highland terroirs of Boquete.

Challenges

The farm operates in a demanding high-altitude environment under Volcan BarΓΊ, requiring constant adaptation to the nuances of the local climate and terrain to maintain specialty-grade quality.

Innovations

The farm utilizes an on-site micro-mill to experiment with processing techniques, including anaerobic fermentation and specialized natural methods, to enhance flavor complexity. They also maintain a direct-to-consumer model that includes roasting on-demand to ensure freshness.
