Los Cenizos

The story

Finca Los Cenizos was established in 2008 by Estela Pittí in the Cerro Punta region of Chiriquí, Panama. The farm is a family-run operation now managed by Estela alongside her children, Stella Marie and Niko, continuing a legacy that began with her father's interest in coffee.

Challenges

The farm operates in a high-altitude, cool climate that requires careful management of cherry maturation and fermentation processes to maintain quality.

Innovations

The farm utilizes humidity-controlled darkrooms for the final stages of drying to ensure precise moisture content and employs specialized processing techniques like cold fermentation.
