Extended Fermentation

Fermentation deliberately stretched well beyond the traditional window — from the usual 12–24 hours to several days — under controlled temperature and oxygen conditions. More time means more microbial activity and more metabolites, which can raise complexity and fruit intensity, but also raises the risk of over-fermentation, defect flavors and loss of the coffee’s own character if pushed too far. Extended fermentations are a core tool of the modern experimental movement, and frequently appear as one stage within double-fermentation protocols. Flavor tendencies: amplified fruit and wine-like intensity, with greater risk of vinegar or fermented-fruit defect when the process slips.
