Processing method
Yellow Honey
A semi-washed method leaving roughly a quarter of the fruit mucilage on the bean. Yellow honey is typically dried in full sun, which speeds the drying and keeps the beans’ color bright. The moderate mucilage gives a touch more sweetness and body than white honey, while remaining far easier to manage than the darker honeys, which need shade and constant monitoring. Like all honey labels, the meaning varies from farm to farm — some producers use yellow to describe anything below red honey — so buyers often confirm the exact mucilage percentage and drying setup behind the label. Flavor tendencies: a gentle, clean cup with mild fruit and soft sweetness, sitting between washed clarity and honey richness.
