Bee Coffee Roasters began in 2006 as a small coffee shop on the northwest side of Indianapolis, founded by Bj with the intent of creating a welcoming space dedicated to the craft of coffee. The company’s focus on specialty roasting began in 2009 when Andy Gilman took the lead on the roasting program. Initially, the roasting operations were conducted on a five-pound roaster located in the back of the original cafe, marking the company's evolution from a pure retail service provider to a production-focused roastery.

As the business grew, the roasting operations expanded and eventually moved to the Circle City Industrial Complex in Indianapolis. A central piece of the company's identity is its use of a restored 1953 Roure thirty-pound roaster, which the team often refers to as the oldest member of their staff. This equipment choice reflects a broader commitment to the technical aspects of the roasting craft, emphasizing the importance of heat application and development in bringing out the inherent flavors of the green coffee.

For much of its history, Bee Coffee Roasters maintained a dual identity as both a roaster and a multi-location retail operator in Indianapolis. However, by 2023, the company shifted its business model significantly, closing its retail cafe locations to focus exclusively on small-batch roasting. This transition allowed the company to dedicate its resources to fresh-roasting beans for its online followers and expanding its wholesale partnerships, moving away from the daily operations of a brick-and-mortar coffee shop.
