Shortly thereafter, the founder, Sean Hunziker, transitioned his focus toward the technical side of the industry, beginning his journey as a professional coffee roaster in the winter of 2007.

Following the initial phase of small-batch roasting, the business shifted its primary operations away from retail coffee shop management to focus on roasting, equipment maintenance, and direct engagement with consumers at local farmers' markets.
