In the Kenyan coffee system, these 'factories' function as wet mills where local smallholder members deliver their hand-picked coffee cherries for processing. The facility serves approximately 1,656 members, with each farmer typically cultivating about half an acre of land, hosting an average of 120 coffee trees. This cooperative structure is central to the Kenyan coffee industry, which relies heavily on small-scale production to maintain its global reputation for quality.

Located at elevations of 1,700 meters above sea level and higher, the farm benefits from the region's nutrient-rich red volcanic soils. The primary coffee varieties cultivated by the cooperative members are SL28 and SL34, which together account for approximately 95% of their production. These varieties are renowned for their distinct, high-quality cup profiles. The remaining production consists of Ruiru 11 and Batian, which are often integrated into the farm's output to improve disease resistance and overall crop resilience.

Processing at Gathaithi follows the traditional, rigorous Kenyan washed method. Upon delivery, cherries are meticulously sorted before being pulped to remove the outer fruit. The beans undergo an overnight fermentation process, followed by a thorough washing and a secondary soaking stage. This meticulous attention to detail during the wet-processing phase is a hallmark of the factory's operations, contributing to the clean, flavor-dense profiles that roasters and consumers associate with Nyeri coffee.

Following the wet processing, the parchment coffee is moved to raised drying beds. The drying period typically lasts between 7 and 15 days, depending on the prevailing weather conditions. During this time, factory staff perform continuous sorting and turning of the parchment to ensure uniform moisture content and prevent defects. This labor-intensive process is essential for maintaining the high standards required for the specialty market.

The factory produces approximately 60 tonnes of clean coffee annually, though it possesses the infrastructure and capacity to potentially double this output. Beyond production, the cooperative is committed to sustainable agricultural practices. Gathaithi holds multiple environmental certifications and actively encourages its members to engage in initiatives such as tree planting and the implementation of improved wastewater management systems to mitigate the environmental impact of coffee processing.

Tasting notes often highlight a distinct sweetness, frequently described as having hints of cranberry, red currant, toffee, and yuzu.
