In 2018, Halfwit merged operations with the Chicago-based café chain Dollop, a move that integrated their roasting production with a larger retail footprint. Production takes place on a 12 kg Diedrich roaster, where the team roasts in small batches three times per week. Every batch is cupped and evaluated to ensure quality control.
