In practice, the factory functions as a community hub for over 1,000 smallholder farmers. These producers typically manage small plots of land, often averaging half an acre, where they cultivate approximately 250 coffee trees. These farms are characterized by intercropping, where coffee trees are grown alongside shade-providing species such as banana, grevillea, and macadamia trees, which contribute to the local ecosystem and provide additional food security for the farming families.

During the harvest season, farmers deliver their hand-picked, ripe coffee cherries to the Ichamama Factory for primary processing. The facility is renowned for its traditional Kenyan washed processing method. Upon arrival, the cherries are depulped to remove the outer fruit, fermented in tanks to break down the mucilage, and then thoroughly washed. The resulting parchment coffee is then sun-dried on raised beds, a meticulous process that ensures the clean, bright, and sparkling cup profile for which Nyeri coffee is famous.

The coffee produced at Ichamama is primarily composed of the classic Kenyan varieties SL28 and SL34, which are celebrated for their deep complexity, alongside newer, disease-resistant cultivars like Ruiru 11 and Batian. These varieties, combined with the high-altitude environment of the Aberdare mountain range—typically ranging between 1,700 and 1,890 meters above sea level—create the hallmark Kenyan flavor profile often described as having candied citrus, red florals, lychee, and a sparkling, wine-like acidity.

For the roaster and the consumer, the Ichamama tag represents a high level of traceability and quality assurance. Because the factory aggregates cherries from many small farms, the cooperative structure allows for the standardization of processing techniques, which is essential for maintaining the consistency required for specialty-grade exports. This model ensures that smallholder farmers can access international markets and receive premiums for their high-quality output, which is often graded as AA or AB based on bean size and quality.
