Khalid Shifa is a third-generation coffee producer whose work centers on the Echemo farm, located near the town of Agaro in the Goma woreda of Ethiopia's Jimma zone. Inheriting the 35-hectare estate from his father, Shifa has become a notable figure in the specialty coffee sector for his focus on high-altitude cultivation and environmental stewardship. The farm sits at an elevation of 2,100 meters above sea level, where the moderate daytime temperatures and cool nights facilitate a slow maturation process for the coffee cherries, resulting in the high bean density and complex flavor profiles sought after by specialty roasters.

A central pillar of Shifa’s management philosophy is the restoration of the local ecosystem. Historically, the land occupied by Echemo was dense forest, but over time, native trees were cleared for firewood and construction materials. These coffees are sourced from heirloom trees—some over sixty years old—originally planted by his father in the Limmu region. These older trees, grown under a forest canopy at altitudes between 1,751 and 2,000 meters, are noted for producing a denser, more indulgent cup profile, often characterized by spicy, floral, and chocolatey notes such as cardamom, jasmine, and dark chocolate.
