During their time abroad, they frequented various coffee houses, an experience that inspired them to create a similar community-oriented, European-style coffee environment upon settling on Cape Cod. The company operates as a specialty coffee roaster, focusing on small-lot, fair trade, and high-scoring beans sourced from regions including South America, Africa, and Indonesia. Their roasting operations are conducted on-site using a Diedrich roaster, where they process batches of 20 to 25 pounds. To ensure quality and consistency, the roastery employs a rigorous development process that includes testing 100-gram samples on a Roest machine to determine optimal roast profiles based on temperature and airflow variables.

Beyond coffee, Three Fins has diversified its manufacturing capabilities by establishing an in-house chocolate factory. Inspired by industry trends in craft chocolate, the owners began experimenting with cacao production to maintain greater control over the quality of their pastry offerings, such as chocolate croissants and cookies. This vertical integration allows the company to manage the entire production process from bean to bar, further distinguishing their retail and wholesale offerings.

In 2025, the company expanded its footprint by opening a second location in Chatham, Massachusetts, situated in a repurposed former health club.
