Topeca Coffee Roasters traces its agricultural roots to 1850, when Santiago Díaz-Cáceres began cultivating coffee on the volcanic slopes of Santa Ana, El Salvador. The company as it exists today was founded in 2002 by Margarita Gaberino and her husband, John Gaberino, in response to the global coffee market crash of 2001. During this period, the collapse of coffee prices made traditional farming unsustainable for many producers, prompting the family to establish a vertically integrated model that would allow them to retain more value by managing the entire process from farm to cup.

The name 'Topeca' originated from a childhood mispronunciation of Margarita Gaberino’s name. By establishing their own wet and dry mills in El Salvador and a roasting facility in Tulsa, the company effectively removed the intermediaries that typically separate farmers from roasters. This structure allows the family to maintain oversight of quality control, processing, and logistics, ensuring that the coffee produced at their farms—such as Finca El Manzano—is handled with specific standards before being exported to the United States.

In practice, Topeca’s operations focus on both their own estate-grown coffees and select international origins sourced through importers. Their roasting philosophy emphasizes a range of profiles, from light roasts intended to highlight the terroir of their Salvadoran farms to darker, roast-forward profiles like their Italian Roast. The company maintains a consistent presence in the Tulsa market, operating multiple cafes and supplying local businesses, while also distributing their coffee to a broader audience through e-commerce.

Beyond roasting, Topeca has invested in coffee education and professional development. In 2015, the company opened a 2,500-square-foot facility in Tulsa known as the Topeca Instruments Division. This space was established as an SCAA-certified teaching lab, offering courses under the Specialty Coffee Association’s 'Pathways' program. This initiative was designed to provide training for baristas, roasters, and coffee professionals, marking the company’s commitment to technical standards within the industry.

The company’s sourcing model is frequently cited as an early example of farm-to-cafe vertical integration. By owning the production infrastructure, the family is able to navigate market volatility that often threatens independent farmers. This direct connection is central to their brand identity, which emphasizes transparency and the preservation of a multi-generational family legacy that has persisted through significant shifts in the global coffee economy.
