Bourbon Ají

Bourbon Ají is the established market name for a Colombian Arabica cultivar. Despite the name, specialty sources report genetic testing consistent with an Ethiopian landrace, so it should not be presented as a confirmed Bourbon selection.

Where did it come from?

The name Bourbon Ají gained visibility in Colombia and specialty competitions. Onyx Coffee Lab reports that genetic testing showed the cultivar is not a true Bourbon, but the established market name remains in use.

What does it tend to taste like?

Lot- and process-dependent. Verve lists hibiscus, yellow plum, and dried cranberry for Gerson Mora's washed release; other verified lots show bright tropical fruit and crisp acidity.

Plant characteristics

Reliable public agronomic specifications are limited. The exact Verve release identifies Bourbon Ají at Finca Villa Pastora without publishing plant morphology.

Why producers grow it

Producers and roasters value its distinctive cup potential and its growing recognition in Colombia's specialty market.
