DRUGAR Processing

DRUGAR processing is a method of coffee preparation in Uganda that involves drying the coffee cherries on the ground, often resulting in a distinct, earthy, and sometimes rustic flavor profile.

DRUGAR is an acronym for 'DRied UganDA RRobusta' (though it is also applied to Arabica in some contexts). It refers to a specific post-harvest processing method common in Uganda where coffee cherries are dried on the ground rather than on raised beds or patios. This method is a traditional, low-cost approach to processing that is widely used by smallholder farmers across the country.

What is DRUGAR processing? It is essentially a natural or dry process, but with a focus on simplicity and accessibility. The cherries are harvested and then spread out on the ground to dry in the sun. Because the cherries are in direct contact with the soil, the drying process can be uneven, and the coffee may pick up earthy or rustic notes from the environment. This is a defining characteristic of DRUGAR-processed coffee.

Why does this matter to the coffee drinker? DRUGAR-processed coffees are known for their heavy body and unique, often polarizing, flavor profiles. While they may lack the clarity and acidity of washed coffees, they offer a depth and intensity that can be very appealing in certain blends or as a standalone experience. The earthy, sometimes spicy or woody notes are a direct result of the drying environment and the traditional processing techniques used.

In practice, DRUGAR processing is a reflection of the realities of coffee farming in Uganda. It is a method that allows farmers to process their harvest with minimal equipment and infrastructure. While it may not always meet the standards of 'specialty' coffee in terms of cleanliness and consistency, it is an important part of the coffee landscape in Uganda. Understanding DRUGAR processing helps us appreciate the diversity of coffee production methods and the different ways that terroir and processing can influence the final cup.
